Summary: This was a gift from one of my editors, Jerry Campany. He grows Thai chili peppers in his yard and enjoys making sauce out of them. The product is quite thick compared to other chili sauces, a very nice texture, though not pasty. It has a very smoky aroma, but the taste is quite different. The potency of the chili peppers overwhelms any smokiness, so much so that my nose was sweating — something that doesn't happen with my usual favorite, Huy Fong Sriracha chili sauce. Jerry's homemade went great with my limu ahi poke (Star Market Mo'ili'ili) and a cup of iced Coca-Cola. Be warned, though. If you ever have some of his chili sauce, you will feel the heat to the top of your head. My only wish is that it tasted as smoky as it smelled. All in all, a fine homemade product that has a market if Jerry were to sell it.
